Smothered Lamb
Ingredients: serves two
Four Lamb Chops:
Two medium-sized Onions:
One large Red Pepper:
Four Wafer Thin Slices of Lemon:
Salt and Pepper:
3/4 teaspoon of Chilli:
Squeeze of Lemon Juice:
One Teaspoon Paprika:
Sprinkle of Herbes de Provence to Taste: (or mixed herbs or Oregano or whatever you fancy).
One tin Chopped Tomatoes.
Method:
Place chops in ovenproof cassserole or deep Pyrex type container with secure lid.
Put one lemon slice on each.
Add onions in thin slices. Slice Red Pepper into thin strips. Add, seasoning herbs and chilli and paprika. Squeeze of Lemon Juice.
Pour in tomatoes.
Place lid securely on casserole/dish. Into pre-heated oven at 200 Deg. C for One Hour.
