You can save this for a 'naughty' day or reduce the butter / oil mixture
Pork filet à la maugerie
2 oz butter
oil
1 pork filet mignon
1 small onion finely chopped
handful sliced mushrooms
salt/pepper
1 teaspn coarse black pepper
1 teaspn mustard
2 tablesp brandy
1 small carton cream
Melt butter & oil in a heavy bottom frying pan
Add sliced pork fillet and fry 3-4 mins both sides, remove from pan and keep warm
Add onion & mushrooms to pan & fry off
Add mustard, salt & pepper
Give it all a good stir
Add brandy
Add coarse black pepper
Return the meat to the pan and give it all a good stir
Add the cream and let it bubble to thicken
Serve with new potatoes & veg
